1-1/2 cups (6 ounces) grated Swiss cheese
8 bacon slices, cooked and crumbled
1/4 cup sliced green onion
4 eggs
1/2 cup milk
3/4 cup heavy cream
1/2 teaspoon salt
Dash black pepper
Dash nutmeg

Make the Oatmeal Pie Crust. Preheat the oven to 425 degrees. Pre-bake pie crust on the lowest rack for 10 minutes. Remove the crust from the oven. Sprinkle the cheese over the bottom of the crust. Layer with bacon and green onions. In a small bowl, whisk the eggs, milk, cream, salt, pepper and nutmeg. Pour slowly into crust. Bake 30-45 minutes, in lower third of oven, until puffy and a knife inserted in the center comes out clean. Let stand 10 minutes before serving.

VARIATION: Add chopped cooked spinach to the filling.
 

Oatmeal Pie Crust

1/2 cup whole-wheat pastry flour
1/4 cup all-purpose white flour
1/2 cup oatmeal
1/2 teaspoon salt
1/3 cup unsalted butter
4-6 tablespoons cold water

Directions:
Directions:
Put the flours, oatmeal and salt in the bowl of a food processor. Pulse a few times to combine. Cut the butter into small chunks, put in the food processor and pulse until the mixture resembles coarse crumbs. Turn the mixture into a large bowl and add the water, a tablespoon at a time, stirring with a fork, until the pastry forms a ball. Wrap in plastic wrap and chill about an hour. Unwrap and put on floured surface. Pat the dough down into a disc, using flour as needed. Roll out the dough to form a 13-inch circle. Fit loosely into a 9-inch pie pan. Flute the edges. Place in the freezer until firm, about 15 minutes.
