1 10-inch Single Crust Pie Shell
3/4 cup grated cheddar cheese
3/4 cup grated Monterey jack cheese
1 cup cooked sliced mushrooms
1 cup cooked or frozen spinach (thaw frozen spinach and squeeze out water)
1/2 cup cooked bacon, diced
3 eggs
1 cup milk
1/2 teaspoon garlic salt
1/4 teaspoon pepper

Directions:
Preheat oven to 325 degrees. In a bowl, mix the cheese, mushrooms, spinach and bacon. Put in the pie shell. In the same bowl, whisk together the eggs, milk, salt and pepper. Pour this mixture over the mixture in the pie crust. Put in the oven on the lowest rack and bake for about 45 minutes, until puffy. A knife inserted in the center should come out clean.

VARIATIONS:

Substitute 1 cup chopped cooked broccoli for the spinach.

Use 1 cup finely chopped ham, 1/4 cup finely chopped green pepper, and 1/4 cup chopped onion (instead of the mushrooms, spinach and bacon) for a Denver Quiche.

Add 1/4 cup chopped green onions.

Top with thin tomato slices just before serving.

For a richer quiche, use heavy cream for all or part of the milk.

Substitute Swiss cheese for the cheddar and/or jack cheese
