Dark Chocolate Mousse Recipe

8 oz semi-sweet chocolate- broken in to pieces
1 oz dark chocolate - broken into pieces
2 tbsp water
6 eggs at room temperature- separated
optional: splash of Grand Marnier

Directions:
Directions:
Place chocolate and 2 tablespoons water into the top bowl of a double boiler and melt slowly, stirring regurlarly.
Remove from heat and allow to cool.
Meanwhile, whisk egg yolks until well blended. Gently mix in to cooled chocolate, in a steady stream while stirring constantly, until a a thick cream is formed.
If you're cream is too thick you can add a little more water 1 tbsp at a time.
If you are adding Grand Marnier or another liqueur of your choice, add about a spoonful to the chocolate cream and mix well.
In a separate bowl whip egg whites until firm. For the best results, whip the egg whites by hand in a cool bowl. This is the most important part to the success of your mousse and will ensure a nice, firm but airy mousse.
Gently fold chocolate cream into egg whites until fully mixed. Do not over mix.
Chill for about an hour before serving.
Serve with fresh fruit, or candied orange rind.
