4 anchovy fillets
2 large garlic clove
¾ tsp kosher salt
1 large egg yolk
2 tbsp lemon juice
¾ tsp Dijon mustard
¼ c plus 2 tbsp oil - olive or vegetable
3 tbsp Parmesan, grated
Fresh ground black pepper

Directions:

Roughly chop the garlic and anchovies. Add the kosher salt. Using the flat of your knife, or a mortar and pestle, grind to a fine paste.

In a medium bowl, whisk together the egg yolk, lemon juice, and mustard.

Add the oil, drop by drop, whisking constantly. As the mixture thickens, increase the addition of oil to a slow and steady stream.

The mixture should have the consistency of mayonnaise. And can be thinned out as needed with small additions of water.

Add the anchovy mixture and parmesan. Combine well.

Add pepper to taste.
