1 1/2 lbs Fingerling Potatoes - sliced in half lengthwise
2 Tbsp melted Butter
3 cloves minced Garlic
1Tbsp Italian Seasoning
1/2 tsp Salt
1/2 tsp Pepper
1 Tbsp Olive Oil (I like to use the flavored oil)
1 Tbsp fresh, chopped Parsley - for garnish

Directions:
Directions:
Preheat oven to 425º.
Toss the potatoes with butter, garlic, Italian seasoning, salt & pepper.
Add the olive oil to bottom of foil covered cooking sheet.
Spread potatoes evenly over sheet.
Bake for 20 - 25 mins, or until crispy.
Garnish with parsley and serve.

Great served with a dip or sauce.

Reheat extras in oven at 400F on a sheet pan covered in foil. Bake 5 - 10 mins then remove foil and cook another 5 mins.

Great alternative to regular cooked potatoes. We love them!!
