½ cup plain Greek yogurt
1 green onion, finely chopped
1 clove garlic, minced
2 Tbls dill, finely chopped (divided)
½ cup feta, crumbled
kosher salt and black pepper

1 cup orzo (reserve 1 cup of the water before draining)

1 pound shrimp, peeled and deveined
1 tsp olive oil (dill flavoured if you have it)
1 tsp butter
1 large lemon, zest and juice

Step 1
Combine yogurt, onion, garlic, 1 Tbls dill, and feta until a thick paste forms. Taste and season with salt and pepper. Set aside.

Step 2
Cook the pasta according to the package directions. Drain the pasta, reserving one cup of the starchy pasta water and return the orzo to the pot.

Step 3
Dry the shrimp with paper towel. Add oil (I used dill oil) and butter to a pan. Heat until shrimp sizzles when placed in the pan. Cook on one side until slightly browned. Turnover and repeat on the other side. (Roughly two minutes per side.)

Step 4
Stir in the lemon juice, zest, and feta mixture and add the pasta water as needed. (Mine needed most of the cup). Sprinkle with the last of the dill and more crumbled feta, if you like.
This can be served hot or room temperature as a salad.
