3 cups Shredded Potatoes (dried ones from Costco - already hot water absorbed - works well - 1 carton)
4 Tbsp (1/4 cup) unsalted butter, melted
Salt & Pepper
8 ounces (1 cup) seasoned Italian Ground Pork Sausage (I use fine sliced precooked leftover bratwurst)
6 large Eggs
1/4 cup Heavy Cream
1 cup shredded Cheddar Cheese
1 cup shredded Monterey Jack Cheese (I use whatever I have - mozza?)
2 whole Scallions, finely chopped (or onion)

Directions:
Directions:
Preheat oven to 375º.
Coat a 9" pie plate with cooking spray.
In a large bowl gently toss the hash browns with the butter to coat.
Season with salt & pepper.
Press hash browns into the bottom and up the sides of pie plate to form a crust.
Bake for 25 - 30 mins until golden brown.
In the meantime - Saute ground sausage in a skillet over medium high heat, breaking it with a spoon until no pink remains. Set aside to cool. (*delete this step if using pre-cooked bratwurst).
In large bowl used for hash browns, whisk together the eggs, cream, cheeses, and scallions. Season with salt & pepper.
Add in cooked sausage & mix to combine.
Pour mixture on top of the hash brown crust. Bake for approximately 30 mins - or until set.
Let cool slightly, cut into wedges & serve.

This is a great recipe - especially for breakfast.
I added some leftover veg from fridge - chopped pepper, mushroom etc.
Good way to use up leftover sausage!
