8 oz. angel hair pasta, cooked
3/4 lb. bay scallops
2 t. olive oil, divided
1 small onion, chopped
2 garlic cloves, minced
1 1/4 c. vegetable broth
2 T. lemon juice
1/4 t. salt
1/8 t. pepper
2 t. cornstarch
2 t. water
1/4 c. fresh parsley, minced
shredded parmesan cheese
sliced green onions (optional)

In non-stick skillet coated with cooking spray, cook scallops in 1 t. oil over medium heat until firm and opaque. Remove from pan; keep warm. In same skillet sauté onion until tender. Add garlic, cook 1 minute longer. Stir in broth, lemon juice, salt and pepper. Bring to boil. Mix cornstarch and water; gradually stir in. Bring to boil, cook and stir 2 minutes or until thickened. Stir in parsley and scallops. Heat through. Serve over pasta and sprinkle with parmesan cheese.
