4 t butter
1 c diced onion
1 cauliflower heads in florets (4 cups)
1 1/2 c chicken broth
1 t chicken base
1/2 t nutmeg
2 c skim milk
1/2 c half and half
1 T chopped parsley
4 oz Swiss cheese
6 T bread crumbs

Directions:
Directions:
In a large saucepan heat butter and saute onion. Add 1 cauliflower, broth, nutmeg, chicken base and bring to a boil. Reduce heat let simmer until cauliflower is tender about 15 minutes. Remove from heat and cool slightly.
Pour in half of cauliflower mixture into a blender process at low speed until cauliflower is finely chopped but do not puree. Transfer to medium bowl and repeat with remaining cauliflower mixture. Then add all back to sauce pan add milk, half and half and parsley. Heat. Ladle into oven safe bowls and sprinkle top with cheese and bread crumbs. Broil until cheese is melted and golden brown. Dash of nutmeg on top. Or freeze in individual servings in quart size baggies.
