1/4 cup cocoa (4 Tablespoons)
1/4 cup shortening
1/2 cup boiling water, this will melt the shortening or butter and chocolate
1 egg, well beaten
1 cup flour
1 cup sugar
1/4 teaspoon salt
1 teaspoon baking soda in 1/3 cup sour milk (milk soured with some vinegar)*

*Use approximately 1 teaspoon of vinegar to sour the milk or substitute 1/3 cup of sour cream for the sour milk.

Preheat oven to 375º. Combine cocoa, shortening and boiling water. Add the egg, flour, sugar, salt, baking soda in the soured milk.

Beat ingredients until smooth. Batter will be very think. Pour batter into an 8 x 8 baking pan. Bake at 375º for 20 minutes or until cake tests done and leaves edges of pan.

My mother always iced it with a touch of almond flavoring to butter cream frosting. But after receiving my sister-in-law's Presbyterian Church Cookbook and trying the flour icing recipe, I've never used anything but this one and my family loves it.

Cream together: 1/2 cup butter, 1 cup sugar, 1/2 cup shortening

Beat until bubbly: 2/3 cup milk, 3 heaping Tablespoons flour, 1 teaspoon vanilla

Add flour mixture to sugar mixture and beat until sugar dissolves and icing is creamy (long time!) But it is Yummy!

"This cake recipe was one my aunt taught in her Domestic Economy (home ec) class during the depression. It fits an 8 x 8 pan so I usually triple the recipe to make a layer cake or to fill a 9 x 13 pan. It was called Cornell (for the university) Dom-Econ Cake, but our family dubbed it "Never Fail" Cake."
