Spaghetti Madness Sauce, double recipe
2-3 Eggplants, slice into rounds or planks
Oil, for frying
Salt
Sugar
Flour
Eggs
Panko Breadcrumbs
Mozzarella Cheese
Parmesan Cheese

Directions:
Directions:
Heat oven to 350º
Sprinkle Eggplant with Salt and Sugar in layers in strainer, this draws out the water and bitterness, let sit 20 minutes or how long it takes you to make the Sauce.
Blot with paper towels to dry.
Set up a dredging station, Flour- beaten Eggs- Panko Breadcrumbs
Heat Oil for frying
Dust Eggplant with Flour, shake off extra flour
Dip into Eggs
Crust with Panko Breadcrumbs
Fry Eggplant until Golden brown and soft
Layer in 13 x 9 " pan starting with a thin layer of Sauce
Eggplant
Sauce
Mozzarella Cheese
Repeat layers ending with Sauce
Top with Mozzarella Cheese and Parmesan Cheese
Cook 30 minutes, until bubble
