1 lb ground beef
1 medium onion chopped
1 clove garlic
1 jalapeno pepper chopped fine (if you like spicy)
1 16oz can kernel corn, drained
1 15oz can pinto beans, drained
1 11oz can condensed cheddar cheese soup
1 8oz can tomato sauce
1/2 cup water (i put the water in the can to get all of the tomato sauce)
1 4oz can chopped green chili peppers
1/2 cup ripe black olives
1 tsp chili powder (use more to taste)
1/2 tsp ground cumin (use more to taste)
Garnish with broken tortilla chips
Sour cream

Directions:
Directions:
On stove top cook meat, onion and garlic in heavy oven proof skillet until brown. I use a cast iron pot.
Drain
Stir in rest of ingredients and mix well.
Bake covered at 375 degrees for 40 minutes, remove lid, stir and bake uncovered for 20-25 minutes more.
OR - cook on stove top the same amount of time.
Serve over broken tortilla chips
Sour cream as desired

My aunt Barbi was the "Queen of casseroles" and this is one of my favorite easy dinners from her collection. We also call this our "One pot meal" since everything cooks in one pot so very little clean up!!
This dish is even better the next day, if there are left overs..
