2⅓ cups granulated sugar
½ cup light corn syrup
½ cup water
¼ tsp salt
2 egg whites
1 tsp vanilla extract
1 cup pecans or walnuts, coarsely chopped

Directions:
Directions:
Cook the sugar, corn syrup, water and salt to 264ºF;, or until it forms a hard, almost brittle ball if dropped in cold water, stirring only until the sugar is dissolved.
When the syrup is almost ready, beat the egg whites until stiff. Add the syrup in a fine stream, beating constantly. Add the vanilla and continue beating until the mixture just holds its shape when dropped from a spoon.
Add the nuts, mixing quickly. Drop as speedily as possible by rounded teaspoonfuls, on lightly greased surface, or turn into a greased 8 by 8-inch pan. Cool, turn out of the pan and cut into squares.

I hesitated to submit this recipe as I have quit using corn syrup and have not had time to try to find a healthier substitute. But this was such a special part of Christmas that I gave in. There are many variations possible - using almonds instead of pecans, using flaked coconut, candied fruit, topping the mixture in the pan with melted chocolate before turning it out and cutting into squares, adding food colouring, etc. But I remember Demy's as the basic recipe describes them.
