1 ½ cups vegetable oil
4 eggs
2 cups flour
2 cups sugar
2 tsp baking soda
2 tsp cinnamon
1 tsp salt
3 cups carrots, grated
1 cup raisons or chopped pecans (optional)

Frosting:
4 oz. cream cheese
1 lb confectioner's sugar
½ cup butter, softened
1 tsp vanilla
1 cup chopped pecans

Directions:

Beat oil and eggs together. Add dry ingredients. Add carrots and nuts or raisons. Bake in 1greased loaf or 2 round cake pans.

Frosting:
Chop nuts. Mix all ingredients together and spread on cool cake.

When I first made this in France it was quite a novelty! Even now, every time there is a pot luck meal I am asked to bring "the" carrot cake. For bake sales or our parish Kermesse I am asked to bake not one but several, some people reserving one in advance. All my grandchildren love to make this, and some of the kids in the village have also learned to make it.
