3 eggs
1 c. sugar
2/3 c. pumpkin
1 t. lemon juice
3/4 c. flour
1 t. baking powder
2 t. cinnamon
1 t. ginger
1/2 t. nutmeg
1/2 t. salt
1 c. chopped pecans
Confectioners' sugar for dusting

FILLING:
4 T. butter
1 c. confectioners' sugar
8 oz. cream cheese
1/2 t. vanilla

Directions:
Directions:
Beat eggs on high 5 minutes; gradually add sugar. Stir in pumpkin and lemon juice. Mix rest of cake except pecans and confectioners' sugar; fold into pumpkin mixture. Put in greased and floured 10x15 pan. Top with pecans; bake 12-15 minutes at 375º. Turn out on a towel dusted with confectioners' sugar. Roll cake and towel together; cool. Beat filling ingredients until smooth. Unroll cake and remove towel; spread filling over. Reroll and chill at least 1 hour.
