4 lg. baking potatoes
2/3 c. butter
2/3 c. flour
6 c. milk
3/4 t.salt
1/2 t. pepper
12 slices bacon, cooked, crumbled
1 1/2 c. shredded cheddar, divided
4 green onions, chopped, divided
8 oz. sour cream

Directions:

Bake potatoes at 400º for 1 hour or until done; cool. Cut potatoes in half lengthwise; scoop out pulp and reserve. Discard shells. Melt butter in a Dutch oven; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat stirring constantly until thick and bubbly. Stir in potato, salt, pepper, 1 c. cheese, 1/2 c. bacon. and 2 T. green onions. Heat through (do not boil). Stir in sour cream, just until heated. Sprinkle bowls of soup with remaining cheese, bacon and green onions.

Shirley's note - I give this soup five stars (I think that is the highest we can go). It is so delicious. What's not to like with potatoes, cheese and bacon?
