2 cups water
1 cup sugar
5 T corn starch
5 T lemon juice
2 egg yolks
1 ½ tsp lemon rind
2 T butter

Meringue:
2 egg whites
5 T sugar
1 T water

Directions:
Directions:
Filling:
Boil water. Add sugar and corn starch*, stir until smooth. Add lemon juice, egg yolks and lemon rind. Mix well, boil until thick while stirring. Remove from heat and add butter. Pour into pre-cooked crust.

Meringue:
Beat egg whites until stiff. Add sugar and water. When putting on pie make sure it touches all sides. This keeps the meringue from 'crying' when it's baked. Put in middle of oven at 325ºF for about 20 minutes.

*To avoid lumps, mix a little cold water with the corn starch before adding it to the hot liquid.
