3 carrots
½ lb chicken breast
4 cans chicken broth
3 celery stalks
¼ onion
1 t thyme
½ pkg egg noodles

Directions:
Directions:
Put broth in a large pot with 1 inch water. Cut chicken in small chunks; add it to the pot. Turn stove on high. Chop carrots, celery and onions; add to pot. Add salt and thyme. Bring to a boil and simmer for about ½ hour. Stir often. Cook noodles as per directions on package. Drain and add to soup mixture 10 minutes before it is done cooking.

FAMILY STORY - CHICKEN SOUP RECIPE

Lisa said when her daughter, Meredith Robinson, was 9 years old, she made up this recipe and made soup for her Nana, Beverly Kohagen Hopp. Nana cooked this soup following her recipe after that and included it in the cookbook she made for each of us.

Lisa likes to spice chicken soup up a little by adding hot chili flakes and garlic. When people are sick, she makes an Asian-inspired version by adding scallions, grated ginger root, garlic, and soy sauce. And they always want more carrots than usual!

Sue said this is a great recipe in which to use a rotisserie roasted chicken for the meat since you can also boil the carcass for the stock. Homemade noodles and a bit of fresh parsley are great finishing touches.
