3/4 C Meringue Powder (from Amazon)
4 lbs powdered sugar
1 1/2 C warm water
2 Tbsp oil free almond extract (without oil of bitter almond)
2 Tbsp vanilla extract

**Read all directions before starting. Figure out in advance, what colors and consistencies you'll need. Have your separate bowls ready. Icing will begin to harden pretty quickly. Don't let the icing sit for long with using it.
Put all powdered sugar in mixer. Add 3/4 C meringue powder; combine on low speed. Combine extracts into warm water. Slowly add to mixing bowl on low speed. After combined, mix at med high speed. After five minutes, and after each additional minute, check to see if stiff peaks are formed. Continue checking each minute until stiff peaks stay exactly as they are without falling. If storing in the fridge, cover with a damp paper towel and saran wrap. Use a fork to mix in food coloring.

Decorative Consistency - for leaves, lines, etc. Base recipe with firm peaks is this consistency.

Outline Consistency - combines with fill/flood so no separate line will show, but keeps the edges of decoration nice. Add water a spray at a time until peaks fall within 30 seconds. Toothpaste or milkshake consistency.

Fill/Flood Consistency - use to fill in basic colors of the design. Add water a spray at a time until peaks fall within seconds. Honey or shampoo consistency.
