1-1/2 cups warm water (110º)
1 tablespoon or 1 pkg. dry yeast
1 cup starter
5 cups flour, divided
2 teaspoons sugar
2 teaspoons salt
1 teaspoon baking soda

Directions:
Directions:
In a large bowl dissolve yeast in warm water. Mix with starter. Add 3 cups flour, sugar and salt. Stir vigorously 2 to 3 minutes. Cover and set in warm place and let rise 1-1/2 to 2 hours or until doubled in size. Mix baking soda with 1 cup of remaining flour and stir in. The dough should be stiff. Turn out onto a floured surface and begin kneading. Add the remaining 1 cup of floor or more if needed to control sickness. Knead until satiny, between 5 to 10 minutes. Shape into 2 oblong loaves or 1 large round loaf. Place on lightly greased cookie sheet. Cover with a damp cloth. Set in a warm place and let rise 1 to 2 hours or until nearly double in size. Before baking, spray with water and make diagonal slashes across the top with a sharp knife.
Preheat oven to 450º with a cake pan filled with 2 cups of water and placed on the lowest rack. With a spray bottle mist oven every 5 minutes during baking. After 15 minutes, remove the pan, spray loaves with water for last time. Reduce temperature to 375º and bake for an additional 30 minutes.
