o ½ head iceberg lettuce
o ½ bunch watercress
o 1 small bunch curly endive
o ½ head romaine
o 2 tablespoons minced chives
o 4 ounces chicken breast, cooked and shredded
o 6 slices bacon, fried and crumbled
o 1 avocado, peeled and diced
o 3 hard-boiled eggs, peeled and diced
o ½ cup Roquefort cheese, crumbled
o ½ cup Special French dressing

Ingredients for Special French Dressing
o ¼ cup red wine vinegar
o ½ teaspoon sugar
o 1½ teaspoons lemon juice
o ½ teaspoon salt
o ½ teaspoon pepper
o ½ teaspoon Worcestershire sauce
o ¾ teaspoon dry mustard
o ½ clove garlic, minced
o ¼ cup olive oil
o ¾ cup vegetable oil

• Chop lettuce, watercress, endive, and romaine in very fine pieces. Mix together in a large wide bowl.
• Arrange chives, tomatoes, chicken, bacon, avocado, eggs, and cheese in rows over lettuce.
• At the table pour French Dressing over salad, toss and serve.

Directions for Special French Dressing:
• Combine vinegar, sugar, lemon juice, salt, pepper, Worcestershire sauce, mustard, garlic, and oils. Chill. Shake well before serving.

I’ve had this recipe for a number of years. Sarah found it on Copykat.com. It is a wonderful version of the famous Hollywood restaurant's salad and a light summertime dish that can serve as your entire lunch or dinner.
