3 T. butter
7 oz. can diced green chiles
1 medium onions, diced
3 T. garlic, chopped
1 1/2 lb. chicken breast, diced
3/4 c. flour
Dash thyme
1/2 T. oregano
Salt and pepper
4 t. chicken soup base
6 c. hot water
Cheddar cheese
Corn tortillas

Directions:
Directions:
Sauté green chiles, onions, and garlic in butter until tender. Add diced chicken. Blend in flour, spices, and chicken base. Add hot water, stirring continuously. Bring to boil and simmer for 20 minutes. Serve with tortilla chips and cheese. **If the soup is not thick enough, add cornstarch and water.

We got this recipe at a restaurant on one of the military bases in Okinawa, Japan. Each time we went there, Mom ordered this soup – she loved it! As our time in Okinawa came to an end, Dad talked to the restaurant staff and managed to get this recipe. He surprised Mom with this recipe during our final days in Japan. It has been a staple in the Gulle household ever since.
