Ingredients: 6 cups milk 6 T raw cacao 3 T non refined brown sugar 1 stick cinnamon (or 1tsp. powdered cinnamon) pinch of salt 1 tsp. vanilla extract optional: 1 egg yolk 2 egg whites, beaten until stiff

Directions:Place the cinnamon stick in a pan. Add the milk, cacao and sugar. Wisk to get the cacao to dissolve and blend. Heat to a simmer, stirring frequently. Add vanilla. If desired incorporate egg yolk, stirring quickly, followed by the egg whites. |

Notes: Although it is easier to make "Mexican Chocolate" using the Abuelita chocolate, I remember Cuca using Van Houten Dutch Cocoa powder. Since I can get raw cacao easily, I prefer to use it. I like to use raw sugar because it has the taste of 'piloncillo', but you can substitute honey or maple syrup and it is just as good. I don't always add the egg, but it gives it a frothier texture and adds nourishment. Just be careful that the chocolate is not too hot when you incorporate the egg or it will curdle.
