3-5 lb. beef chuck roast, cut into 8-10 pieces
1 tbsp olive oil
½ cup red enchilada sauce, mild
8 oz. chopped green chilies, mild
2 tbsp. chopped chipotles in adobo sauce
2 tbsp. lime juice
2 tbsp. apple cider vinegar
2 tbsp. brown sugar
1 tbsp. worchestershire sauce
1-3 tbsp. liquid smoke
1 tbsp. ground cumin
1 tbsp. dried oregano
2 tsp. salt
1 tsp. garlic powder
1 tsp. onion powder
½ tsp. chili powder
½ tsp. paprika
¼ tsp. ground cloves
¼ tsp. ground cinnamon
2 bay leaves

Sear cubes of beef in a large skillet over medium heat with the olive oil. Transfer to a 6 qt. crock pot. Add all other ingredients and stir to combine. Cover and cook on high for 3 ½ - 4 ½ hours or on low for 6 - 8 hours, or until beef can be shredded with a fork.
Remove beef to a cutting board and shred. Add back into the crock pot and toss in the juices. Cook on low for another 20 minutes for the beef to absorb the juices.
Remove beef with a pair of tongs to a serving bowl.

Depending on how spicy you like yours, you can adjust the chipotle peppers. If you want the kids to eat it only use one. This is great for tacos, burritos or nachos. It's one of my favorites.
