2 lbs cubed beef
10 oz can mild red enchilada sauce
16 oz jar Picante sauce (mild)
4 oz can fire roasted green chiles
1 clove crushed garlic
1 large white onion, diced
1 tsp. chili powder
½ tsp. cumin
¼ tsp. black pepper
12 flour tortillas (approx. 12 oz.)
3 cups colby jack cheese, divided
Optional:
1 bunch chopped green onion
1 diced tomato
sour cream
guacamoli
Directions:
Directions:
Place cubed beef in the crock pot. Add the enchilada sauce, picante sauce, green chiles, garlic, onion, chili powder, cumin and pepper. Stir.
Cover and cook on low for 8 hours.
When done, cut the flour tortillas into strips; add to the crock pot along with one cup of cheese. Stir and flatten out with a spatula. Sprinkle with the remaining cheese.
Put the lid back on and cook for 30 minutes more on high.
Sprinkle with green onions and tomatoes. Serve with sour cream and guacamoli. Serve and enjoy.
