o 1 cup rice
o 1½ cups water
o 2 tablespoons olive oil
o 1 egg
o 1½ cups ham or cooked chicken, diced
o 1 cup frozen peas
o 1 bunch green onions, sliced
o 1 bunch baby bok choy, chopped
o Handful fresh bean spouts
o 1 cup snow peas, sliced
o 1 tablespoon soy sauce
o 1½ teaspoon sesame oil

Directions:
Directions:
• Cook rice in water as directed on package. Fluff and allow to cool.
• Heat oil in wok. Break egg into oil and scramble with a chop stick if you have one. Add ham or chicken and vegetables. Sauté for 2-3 minutes. Add additional oil if needed.
• Add rice and cook for 2 more minutes. Add soy sauce and sesame oil. Toss mixture and serve.

This is a simple, basic recipe for fried rice. Add any vegetables you like. Roger likes to kick it up a bit by adding chili oil to his servings, others like more soy sauce. Play around by tailoring it to your tastes.
