FOR THE DOUGH
1 ½ cup flour
2 ½ cup smeed na3em
¾ cup melted butter or samna
1 tsp baking powder
¼ cup sugar
pinch of salt
1 ½ cup water
2/4 cup dried milk (powder) OR 1 ¼ cup milk

KNAFA COLORING
¾ Cup butter
1 ½ tsp knafa pastry coloring

CHEESE
Cheese (sweet cheese, akawee cheese, panela, fresh mozerella)
About 4 cups whatever mix you decide

Directions:
Directions:
1) Mix the smeed, flour, powdered milk, baking powder, salt, butter, and water together.

2) Flatten the dough in a pan then leave for 10 min then place it in over on 350 for 30 min. Place a knife in dough and if it coms out clean its good, but if its still soft leave for another 10 min.

3) While dough cools, shred the cheeses and mix them together and set aside.

4) In a food processor, mix the dough to make it na3am. Then add ¾ cup butter and 1 ½ tsp knafa color then bring it to 11” or square pan.

5) In the pan, add butter and ½ tbs knafa coloring.

6) Spread the dough into the pan and press down.

7) Add cheese on top of the dough and sprinkle some sugar on it.

8) Place in oven. After 10-15 min, use a knife to go around the pan removing cheese from the edges. Shake the pan so it moves, and bring a larger pan on top of it and flip it.

9) Pour atar on top and garnish with pistachios.
