2 lb boneless, skinless chicken breast, cut into tenders

Marinade-
10 garlic cloves, coarsely chopped
¼ c Sriracha
2" piece of ginger, peeled and finely grated
4 Tbsp extra virgin olive oil
4 Tbsp reduced sodium soy sauce
4 Tbsp apple cider vinegar
Juice of two lime
2 Tbsp Splenda

Directions:

Whisk marinade ingredients together and transfer to a plastic bag
Add chicken to the marinade bag, seal and allow to marinate for a minimum of 2 hours

When ready to cook, pull chicken out of fridge and allow to sit on counter while preheating the oven to 425º F

Transfer chicken to a baking sheet lined with parchment paper
Cook for 25 to 30 minutes, or until cooked through, basting with marinade from time to time

While chicken is cooking, reduce marinade in a small saucepan

Once chicken is cooked, toss in reduced marinade before serving
