Ingredients: o 2 pounds navy beans o 4 quarts water o 1 thick slice leftover spiral ham, cut into small pieces o 2 bay leaves o 8 whole peppercorns o 2 whole cloves o ¼ cup (½ stick) butter o 1 medium onion, chopped o 2 stalks celery, chopped o 2 garlic cloves, chopped o ½ cup mashed potatoes o ¼ cup fresh parsley leaves o salt and pepper

Directions:• Rinse the beans in hot water until they are white. Place in stockpot, add the water, peppercorns, bay leaves and cloves and bring to a boil. Reduce the heat and simmer for 3 hours. • Heat the butter in a small skillet over medium heat. Sauté the chopped onion, celery and garlic until lightly browned. Add the sauteed vegetables and mashed potatoes to the pot of beans. • Remove 2 cups of the bean mixture, puree in a blender and return to the soup. • Add ham to the soup mixture and simmer till heated through. Just before serving, season the soup with salt and pepper to taste. • Garnish with parsley and serve. |

Notes: This is a combination of two Senate Bean Soup recipes I found on the web and in my 'Joy of Cooking' recipe book. The adding of mashed potatoes may seem odd but if you were the senator from Idaho wanting to push potatoes on his fellow politicians, it makes sense. We like the thickening effect that the mashed potatoes add to normally thin bean soup. It’s great on a cold, rainy winter day.
