4 c plain white flour
1 t salt
1 t baking soda
1½ c buttermilk or sour milk
Optional: ½ c raisins

Pre-heat oven to 450 degrees. Mix the flour, salt and baking soda in a large mixing bowl. Make a well in the middle. Gradually mix the buttermilk with your hands or a wooden spoon until a moist dough forms. If the dough is too moist, sprinkle a little flour on it. Be careful not to overwork the dough. Turn the dough out onto a floured work surface and pat it gently into a round about 2 inches high. Place the round on a lightly floured baking sheet. Cut a deep cross in the top with a floured knife. Bake for 30 - 45 minutes until the loaf sounds hollow when tapped. Take it off the baking sheet. Lean it up on something so not all the bottom is flat while it cools. Cover with a tea towel while it cools. Serve with butter and jam.

Some people add raisons to the dough. You may either use dried raisins or raisins that have soaked in water for an hour or so to plump them.
