6 c wholemeal (wheat) flour
4 c white flour
2 t baking soda
2 t salt
3½ c buttermilk

Pre-heat oven to 450 degrees. Mix all the dry ingredients in a large bowl. Make a well in the center and slowly add most of the buttermilk; mix with your hands or a wooden spoon until a soft dough is formed. Add more buttermilk if necessary but don't let the mixture become too moist. If it is too moist, sprinkle some flour over it. Turn the dough onto a floured surface and pat it gently into 1 or 2 rounds about 2 inches high. Place on a lightly floured baking sheet and mark a deep cross on the top with a floured knife. Bake for 15 - 20 minutes, then reduce the heat to 400 degrees. Bake for another 20 - 25 minutes, until the loaf sounds hollow when tapped. Take it off the baking sheet. Lean it up on something so not all the bottom is flat while it cools. Cover with a tea towel while it cools.
