o 1 head broccoli
o 6-8 slices bacon, crumbled
o ½ cup chopped red onion
o ½ cup raisins
o 4 ounces sharp cheddar cheese, grated
o 1 cup mayonnaise
o 2 tablespoons white vinegar
o ¼ cup sugar
o ½ cup cherry tomatoes, halved
o salt and freshly ground black pepper

• Trim off the large leaves from the head of broccoli. Remove the tough stalk at the end and wash the broccoli head thoroughly.
• Cut the broccoli head into florets and the stem into bite-size pieces. Place in a large bowl.
• Add crumbled bacon, onions, raisins and cheese.
• In a small bowl, combine the remaining ingredients, stirring well.
• Add the mixture to the broccoli and toss gently.

This is a Paula Dean recipe from Food Network. I like it because it is simple and easy to make and light and fresh to eat. Roger likes salads that are not leafy and have texture. For somebody not keen on salads, he gives this one high marks.
