3 cups flour
2 1/2 tsp instant yeast (1 packet)
1 tsp sugar
1 tsp salt
1 1/4 cup warm water
1 tbsp. olive oil

Directions:
-Add yeast and sugar to water and let sit for 10 minutes. Ensure water is frothy and fragrant after 10 minutes. If not yeast is expired and cannot be used and new yeast will need to be used.
-Add flour, salt and oil to water and mix into a shaggy ball and there is only a little bit of flour on the bottom of the bowl.
-Knead dough with palm of your hand until it forms a smooth ball and doesn't stick to your hands or counter, should only take 5 minutes.
-Pull sides of dough under ball on all sides. Give bottom where seams meet up a good pinch with your palm and a slight twist.
-Grease a bowl with olive oil and set dough ball into bowl, seams sides down. Cover with towel or plastic wrap to proof for 45 minutes.
-When dough ball doubles in size punch down and roll out to desired size and thickness.

-Produces a low rise crust. For thin crust style do not let dough proof, roll out immediately. For more airy structure in the dough let proof for 2 hours or longer, but don't exceed 4 hours.
