Cilantro Lime Dressing |

Ingredients: 1/2 c. fresh lime juice 1/2 c. EVOO 1/4 c. honey 1/3 c. cilantro 2 garlic cloves
1-2 bunches kale, washed and chopped into bite size pieces 1-2 shredded carrots 1/2 small shredded red cabbage 1 14 0z. can of black beans flour tortillas or naan bread *shredded chicken, shrimp can be added to your liking

Directions:Process all ingredients in a food processor. Marinate salad in dressing. To assemble kale tacos, place garlic spread and kale salad on each tortilla. Wrap it up and enjoy! |

Notes: I came up with this recipe because Sammie loved to buy 2 kale tacos/$13 at Leahi Health food bar. The Chinese in me said, "I'm not paying that much for 2 tacos full of kale." I researched various recipes and put together this final version which she loved. In senior year at Iolani School, Sammie even used this recipe for a presentation in her Health class and it was a winner with her class and teacher. A+, mom!
