Ingredients:  
Ingredients:  
1) 1 cup each: tomatoes, celery, green pepper, onions ( I also use carrots, broccoli and pea pods) chopped
2) 1# tender beef, sliced thin ( easier to slice if partially frozen)
3) 1 slice of ginger root , crushed ( can also used a jar of the crushed )

Beef Marinade:
1) 2Tbsp soy sauce
2) 2 tsp cornstarch
3) 1 tsp sugar

Gravy:
1) 1/2 tsp salt
2) 1/2 cup water
3) 2 tsp sugar
4) 1 Tbsp cornstarch
5) 2 Tbsp soy sauce

1). Slice the beef and put in bowl with the marinade Let sit for at least 10-15 minutes
2) Chop the vegetables in cubes about the same size, approximately 1- inch ( keep the tomatoes separate)
Cooking:
1) A wok works well for this dish. Heat 1 Tbsp oil in wok
Pan fry the beef, marinade and ginger quickly to medium done. Remove meat from pan
2) Add 1 Tbsp oil to pan and add vegetables in. This will take longer than the meat. Start with the vegetables that take the longest to cook, adding the others as you cook
3) When vegetables are almost done , add the gravy and meat and bring to a boil
4) Mix in tomatoes and serve over rice &/ or Chow main noodles

In the past , I have used round steak and elk steak for the beef To make more serving just increase your meat amount
