Quelitas:
2 Tbsp fat (oil, bacon, or salt pork chopped fine)
1/4 onion chopped
2 cups spinach greens, washed thoroughly, can be chopped
1 tsp dry crushed chiles (pequin)
1 tsp salt


Verdolagas (Purslane)
3 cups purslane
Same as above. An option is to sauté chopped tomato with onion.

Quelites:
Place oil, bacon or salt pork in frying pan and sauté onion until soft. Add greens and cook down until wilted. Season with chile and salt.

Verdolagas (Purslane):
Cook the same as quelites. Leave red stems on, but use only cleaned and washed greens. Cover and cook until tender. An option is to sauté chopped tomato with onion.

* Dad would come home with a handful of wild spinach and cook this.
