INGREDIENTS

2 ½ cups all purpose flour
1 teaspoon salt
½ teaspoon baking powder
⅓ cup shortening
1 cup hot water

Directions:
Directions:
1) In a large bowl combine the flour, salt and baking powder.

2) Using a pastry blender or your hands, incorporate the shortening until it resembles coarse meal.

3) Slowly add the hot water a little at a time until dough holds together. Do not pour all the water at once

4) Turn dough onto work surface and knead for a few minutes until smooth.

5) Divide the dough into the amount of pieces you need depending on what it is being used for. *see notes*

6) Roll into a round shape and use the palm of your hand to slightly flatten to form a disc shape.

7) Cover the dough with a damp towel or plastic wrap and let rest for 30-45 minutes

8) When dough is done resting heat an ungreased grilled on medium heat.

9) Using rolling pin roll dough on a lightly floured surface. Move your rolling pin in up and down motions, turning the tortillas 45 degrees and flipping over. Continue this motion until you reach the size your looing for. Tortilla dough should be almost see-through.

10) Place your tortilla on your hot griddle. Cook on one side for 20-30 seconds until bubbles and light brown spots start to form. Flip tortillas and cook for another 20 seconds.

11) Remove tortilla and keep wrapped in a towel while you make the rest of the tortillas.

Personal Notes:
- Water should be hot not warm. Use the hottest temperature that you are able to handle with your hands.
- Divide the dough into 10 pieces for smaller tortillas used for fajitas.
- Divide the dough into 6 pieces for very large tortillas used for crunch wraps. Maybe 8 pieces for burritos.
