12 ounces orzo pasta
1 lb spinach leaves, coarsely chopped
½ cup sun dried tomatoes
½ cup feta cheese, crumbled
10 kalamata olives, pitted and chopped
Pine-nuts sautéd
¼ cup extra virgin olive oil
3 tablespoons balsamic vinegar
½ teaspoon salt
Fresh ground black pepper
a pinch of cayenne pepper (optional)

Directions:
Directions:
1) Cook orzo according to package directions. Add in the spinach during the last minute of cooking. Drain and rinse with cold water to stop cooking.

2) Place sundried tomatoes, feta, olives, and pine nuts in a mixing bowl. Add in the orzo and spinach.

3) In a small bowl, whisk together the olive oil, vinegar, salt, pepper, and cayenne, if using. Pour over orzo mixture and toss to combine.

4) Taste and adjust seasoning. Serve at room temperature.
