For the Eggrolls
Ingredients:

4 large haas avocados, peeled, pitted, & diced
½ cup sun-dried tomatoes chopped
¼ red onion, minced
2 tablespoons cilantro chopped
½ teaspoon kosher salt
16 egg roll wrappers
1 large egg, beaten
Vegetable oil, for frying
Directions:
Directions:
1) Combine the avocados, sun-dried tomatoes, red onions, cilantro and salt in large bowl and lay out your egg roll wrappers on a tray.

2) Brush the edges of the egg roll wrappers with the egg and fill with 3 tablespoons of filling each, then fold in the sides of the wrapper and roll closed, make sure there isn't extra air in the egg rolls as you wrap.

3) Heat 3” of oil and fry the egg rolls for 3-4 min until golden brown then let cool on a metal cooling rack and serve with dipping sauce.
 

Dipping Sauce
Ingredients:  
Ingredients:  
½ cup fresh cilantro
¼ cup green onions
¼ cup cashews
½ cup honey
¼ cup olive oil
2 tbs vinegar
1 tbs sugar
1 tsp tamarind pulp
½ tsp kosher salt
½ tsp black pepper.
Directions:

Add all ingredients in a food processor.
