11 egg yolks
2 c. sugar
1 c. scalded milk
1 t. vanilla
2 1/4 c. sifted cake flour
2 t. baking powder
1/2 c. melted butter

Directions:
Directions:
Beat egg yolks and sugar until light and fluffy. Add slightly cooled milk and vanilla. Sift flour and baking powder 3 times. Add to egg mixture. Fold in butter. Line 2 (9") cake pans with waxed paper. Pour in batter. Bake at 350º 30-40 minutes. I usually made 3 thinner layers to have more frosting! Save egg whites to make an angel food cake or to make omelets.

Lois would always make this at Easter. She made Seven Minute boiled frosting to put between layers and on top. She would then sprinkle coconut on layers and top of cake. Fresh grated coconut is best, but Baker's coconut is very good also.
