Mom's Fried Potatoes Recipe

4 medium Idaho or Russer potatoes
1 green pepper
1 vidalia onion
~ 2 Tbsp canola oil

Directions:
Directions:
Line a medium bowl with paper towels and set aside

Clean and cut onion and green pepper into ~ ¾" to 1" chunks

Clean potatoes and slice horizontally ¼" or thinner

Heat oil in a large frying pan over medium heat
Add onions, peppers and potatoes
Sprinkle with salt and pepper, to taste

Cook with a tilted lid, flipping potatoes over occasionally to ensure even cooking

After flipping the first time, salt and pepper the newly exposed side

Once everything is tender with some pieces browned and crispy, transfer contents to the bowl (this helps absorb some of the excess oil)

Enjoy plain or with ketchup (my favorite)
