1 1/2 lbs. ground beef
1 onion, chopped
1 green pepper, chopped
2 t. chili powder
1 1/4 c. salsa
1 can sweet corn, drained
6 tortillas
1/2 c. sour cream
1 c. shredded cheese
Optional:
chopped cilantro
chopped green onions
Directions:
Directions:
Brown meat with onion and pepper. Stir in chili powder, salsa and corn. Simmer 5 minutes. Spread some meat mixture in 8" or 9" baking dish. Top with layer of tortillas. Then add a little more meat mixture, sour cream and cheese. Repeat. Cover with foil. Bake for 25 minutes at 350º. Serve with chopped cilantro and green onions.
