1 (15 oz.) can pink salmon or jack mackerel, deboned
2 eggs
2 tbsp. self-rising flour
2 tbsp. self-rising corn meal
¼ c. onion
Dash red pepper flakes
Salt to taste
2 tbsp. vegetable oil

Directions:
Directions:
Prepare croquettes, in a medium bowl, with all ingredients above except vegetable oil. Make patties the size you’d like and set aside.

Heat skillet on medium heat with 2 tbsp. vegetable oil.

Fry and brown on each side about 2-3 minutes. Remove from skillet and drain on paper towels.

Serve immediately.
