Spiced Pecans Recipe

1 cup milk
1 tsp vanilla
2 lbs pecan halves

1. Prepare two baking sheets lined with foil and set aside.

2. Add sugar and milk to a large pan (I use a 6 qt soup pot) and turn heat to high, stirring constantly. Once everything dissolves and begins to boil, keep stirring.

3. Clip candy thermometer to the side of the pot and stir until mixture reaches soft boil stage. If you dont have a candy thermometer, you can have a glass of cold water close by and can drop a little in the glass and see if you can reach in and gather it into a small ball. If so, then it's ready. You can tell it's ready to test when the texture changes and it begins to have smaller bubbles. This usually takes about 15 minutes.

4. When ready, stir in vanilla and turn off the heat. Dump in the pecans and stir quickly until all are coated evenly and it begins to start to powder.

5. Dump half of mixture onto each pan and quickly begin to spread out and separate the pecans to dry. You dont want them to dry in clumps. they are difficult to separate after they start drying and will just break apart.

6. Let cool and store in a glass or plastic container for up to a month.
