2 packages frozen chopped spinach, thawed and drained
6 eggs
1 16 oz. container cottage cheese
2 c. shredded Muenster or mozzarella (can be combined with feta)
1 tsp salt
sesame seeds
spices to taste (cumin is good)
butter for seasoning pan

Directions:

Preheat oven to 350º

Squeeze as much liquid out of spinach. In a large bowl, mix spinach, eggs, cheese, and spices.

Transfer to seasoned baking dish or muffin tins. Sprinkle with sesame seeds. Bake for 1 hour (45 min. for muffin tins), until top is golden brown and inside is cooked through.
