Chocolate Frosting

2 c (370 grams) cooked quinoa, cooled
⅓ c milk
4 eggs
1 tsp pure vanilla extract
½ c unsalted butter, melted and cooled
¼ c unsweetened apple sauce
1 c splenda
½ c sugar
1 c cocoa
1½ tsp baking powder
½ tsp baking soda
½ tsp salt

Preheat oven to 350º F
Spritz a 9 x 13" pan with canola oil and set aside

Combine milk, eggs and vanilla in a blender and process until just combined
Add quinoa, apple sauce ¾and melted butter, process until very smooth

In a large mixing bowl, whisk together sugar, splenda, cocoa, baking powder and baking soda

Add the wet mixture to the dry mixture and stir until well combined

Pour batter into pan, spreading until evenly distributed

Bake for 30 minutes

Allow to cool completely before frosting ¾¾

3/4 c pumpkin puree (or sweet potato cooked and peeled)
1/2 c cocoa powder (or cacao powder)
3 Tbsp splenda
2 Tbsp agave syrup
1/4 c coconut oil or grapeseed oil
1 tsp pure vanilla extract
1/4 tsp salt

Put all ingredients into magic bullet (or blender or food processor)

Process for 1 to 2 minutes, until the mixture is smooth and glossy
