3 T. light brown sugar
1 T. kosher salt
1 T. dried rosemary
1 t. garlic powder
1/2 t. freshly ground black pepper
2 lbs thick cut (1-1 1/2 inches) pork
loin chops, 4 bone-in or 6 boneless
1 T. extra-virgin olive oil

Directions:

Combine sugar and seasonings. Rub on both sides of pork chops. Let sit at room temperature 15 minutes or cover and refrigerate up to 24 hours. Heat a heavy oven-proof skillet over medium-high heat until a drop of water sizzles instantly. Add the oil and the pork chops. Sear 5 minutes; until nicely browned on one side. Turn over and transfer the skillet to the oven. Bake 8-10 minutes at 425º (140º-145º). Let rest 5 minutes before serving. If you don't have an oven-proof skillet, line a pan with foil and place chops in it to bake.
