1 pkg. yeast (2 1/2 t.)
1/2 c. warm water
1 c. boiling water
1/4 c. shortening
1/2 c. sugar
1 T. salt
1 c. evaporated milk
2 eggs, beaten
9 1/2 c. flour, approx.

Directions:
Dissolve yeast in warm water. Pour boiling water over shortening, sugar and salt. Add milk and let stand until warm. Add dissolved yeast and eggs. Stir in 4 c. flour and beat. Add more flour to make a soft dough. Place in greased bowl and grease top of loaf. Cover and chill until ready to use. Do not let dough rise before frying. Roll dough to about 1/8" thick and cut in squares. Fry in deep hot oil. They will rise to the top when done on one side. Flip over when brown. Drain; sprinkle with confectioners sugar.

This recipe is supposed to be like the beignets served at the Café du Monde in New Orleans. These are typically served with café au lait at the Café du Monde, but they are delicious for breakfast. I got this recipe when we made them in a baking class I took at Forest High School back in 1976.
