1 bag of fresh bread dough (usually in a refrigerated section, buy local)
2-3 bags of fresh spinach (depending on the size of the bag)
2-3 cloves of fresh garlic, minced
1 medium can of sliced olives
1 package of pre-sliced pepperoni
1 8 oz package of shredded mozzarella cheese
2-3 tbsp olive oil

1. In the morning, put dough in a large bowl with a little bit of olive oil to keep it moist. 2. Put a wet towel over the bowl and set aside for it to rise (usually 2-3 hours). I only do one rise.

After the dough is raised: Preheat the oven to 375°
Steam or boil the spinach in salted water. Then drain and let it cool down so that you can squeeze the water from the spinach; the dryer the better. Once the spinach is done, put it in a bowl and add: garlic, olives, salt and pepper to taste and 2-3 tbsp of olive oil. Mix well.

Putting it together:
Once the dough is raised cut it into 4 equal parts. Use a rolling pin to roll out the dough. Be careful not to make it too big. Divide the spinach into 4 parts. Add the spinach mixture to one half and cover with pepperoni and cheese. Once all the ingredients are on, you will stretch the top of the dough over the spinach, pepperoni and cheese and press the dough together.

Brush with olive oil and cook until golden brown for about 25-30 minutes.
