DUMPLING FILLING
*450 grams (1 pound) ground pork
*1½ tablespoon freshly grated ginger
*2½ tablespoons soy sauce
*5 scallions, finely chopped
*2 teaspoon salt
*½ teaspoon grated peppercorn
*450 grams (1 pound) cabbage
*2½ tablespoons mirin rice wine
*A large amount of garlic
*2½ tablespoons (sesame) oil

DUMPLINGS DOUGH
*420 grams (3 cups) all-purpose flour
*1 cup boiling water
*1/4 cup room temperature water
*1 teaspoon olive oil

Directions:
Directions:
Mix all of the filling ingredients together in a large bowl.
To make dough, add flour to medium bowl, pour in boiling water and mix until soild dough is formed. Once it's completely mixed together, add room temperature water. Knead for about five minutes. Transfer to oiled bowl. Cover and let rest for 30 minutes.
Cut ball of dough into fourths. Using the palms of your hands, roll each of the quarters into logs about 30 cm (12 inches) long and cut into 2.5 cm (1 inch) pieces. Roll out each piece with rolling pin and fill with a teaspoon of filling. Steam for 8 minutes or fry.
